P.S. Georgians, forgive me if you can... A fragrant, spicy and slightly spicy Georgian snack with a little secret. I cook lobio now only according to this recipe.

    How to make lobio from canned beans? To begin with, the walnuts peeled from the shells and partitions should be lightly fried in a dry frying pan (without oil). As soon as the nuts give a smell and are browned, remove them from the heat and let them cool down a little. Meanwhile, rinse the cilantro thoroughly in running water and flip it into a colander so that all the water runs off.

    Peel the red onion from the husk and cut into strips about 2 cm long. You can safely use white onions.

    Heat 3 tablespoons of sunflower oil in a frying pan and put the onion to fry. As soon as it softens a little, add paprika and ground black pepper.

    Now you need to throw the canned red beans into a colander. Do not pour out the liquid! We'll need it again.

    Send the beans to the pan to warm up a little and fry for 2-3 minutes on medium heat.

    And now add the liquid from under the beans to the pan. Simmer the dish for 20-25 minutes, stirring. If the liquid has time to evaporate, add a little boiling water and simmer again. The idea is for the main ingredients to combine their tastes and have time to "fall in love" with each other.

    It's time to do nuts. You can use a blender to grind them. But I like it when the nuts are felt in the dish, and so I just cut them with a knife, but quite finely.

    Also cut the cilantro. If you are not a fan of cilantro, you can also use parsley. But, of course, it is cilantro that fits into this dish as a native.

    Mix nuts, cilantro, garlic grated on a fine grater, 2 tbsp sunflower oil, red wine vinegar and suneli hops in a separate bowl. Add salt to taste.

    By this time, almost all the liquid had already evaporated from the beans. Check this: use a spatula to spread the beans in the middle of the pan and estimate the amount of liquid. It should remain quite a bit.

    You can safely send coriander with nuts and spices to the pan. And now my signature secret. At this stage, I add 1 tablespoon of sugar to the lobio in order for the dish to acquire another shade of taste.

    Mix well and simmer for another couple of minutes. Done!
