This recipe for cooking fish amazes with a combination of simplicity in preparation and sophistication of the finished version of the dish. The base is a fillet of white fish. The variety can be any, we choose independently from the simplest pollock and hake to more expensive types.

Ready-made fillets are sold in stores, this is the easiest way to cook, just defrost it. If the fish is whole, we clean the scales, cut off the head and fins, gut them, wash them with running water and dry them. Then we remove the fillet, making a deep incision along the ridge and only after that we remove the skin from the finished fillet. If you remove the skin in advance, it will be difficult to separate the fillet, it will fall apart.

Fillet is prepared. Turn on the oven at 180 degrees to warm up and do the sauce. Peel the onion, wash it and cut it into rings. It is not necessary to be thin, it should maintain integrity when shifting into a mold, ideally - about 4 mm thick.

Heat the vegetable oil in a frying pan and fry the onion. Cut the cheese into pieces, add it to the pan and cook on low heat. Stir constantly until the cheese melts, it should not burn, but simply become liquid.

When the cheese has melted, pour in the cream. Season the sauce with basil, oregano, nutmeg, salt and ground pepper. Simmer for about 2-3 minutes.

We put the fish fillets in a baking dish. It is possible in whole layers or pre-cut into portions, if desired. Sprinkle the fish with lemon juice. Next comes the turn of the sauce, but it is undesirable to immediately pour it from the pan. To preserve the integrity, it is better to try to carefully put the onion on the fish, and pour the sauce on top.

Bake the fish in a preheated oven for 30-35 minutes until a golden crust forms. Sprinkle with chopped herbs and serve to the table. The dish goes well with a side dish of potatoes or vegetables.
