    If you have frozen Trigla, first take it out of the freezer and leave it to thaw at room temperature. Remove the insides from the fish. The scales of the sea rooster are practically absent, so it is relatively quick and easy to carve it. If desired, cut off the fins, legs and wings (I leave them, it seems to me, so the finished fish looks more appetizing and more beautiful).

    Peel the garlic, cut half of the clove into thin plates, and then cut each plate in half. Rinse the fish and dry it with paper napkins. Make several incisions on the back of each carcass with a thin sharp knife. Place the garlic slices in the incisions.

    Prepare the refueling. Pour olive oil into a small container, add the remaining garlic grated on a fine grater, black and red peppers, salt, dry rosemary and oregano. Spices can be chosen any to your taste, their quantity is also adjusted at your discretion. Mix everything well.

    Use a silicone brush to lubricate the belly of a sea rooster with fragrant oil. Add some fresh herbs inside, I used parsley.

    Coat the backs and heads with marinade and leave the fish to soak up the aromas of oil and herbs for a while (ten to fifteen minutes will be enough).

    Cover the baking dish with baking paper. Place the Trigla belly down on a baking sheet. Place in the oven and bake for about 30 minutes at a temperature of 210 degrees. Attention!- the baking temperature may vary depending on the capabilities of your oven. Sometimes 180 degrees is enough for cooking.

    Focus on the fact that the skin is browned, and the fish has acquired a beautiful golden hue. I had a drop of oil with spices left and I smeared the already prepared fish with it again.

    Serve the sea rooster with fresh herbs, lettuce leaves and vegetables. Sprinkle with the juice of a freshly squeezed lemon before serving.

    The meat of the sea rooster is white, dense and practically does not contain bones. Incredibly delicious!
