    How to make juicy cutlets from minced rabbit? Prepare the products. I used ready-made chilled minced meat from a supplier I trust. But if you are going to cook minced meat yourself, I recommend passing rabbit meat through a meat grinder with small holes twice. So future cutlets will be airy, with a more mousse texture.

    Pour milk into a bowl with minced meat (the fatter it is, the more tender the cutlets will turn out in the end). You can replace milk with cream of 10% fat content. Add the breadcrumbs. Use crackers purchased or homemade, with the latter it will taste better.

    Wash the eggs and beat them into a bowl with minced meat. Add dried herbs. I have basil, marjoram and rosemary. You can put your own set or not use herbs at all. Add salt to taste. If you wish, you can also pepper the minced meat. Mix all the ingredients thoroughly. To speed up the process, you can use an immersion blender.

    Melt butter in any convenient way. Personally, it is more convenient for me to heat the oil in a small ladle over low heat. But you can do it both in a microwave oven and in a water bath. Pour the cooled oil into the minced meat and mix everything again.

    Typing minced meat with a tablespoon, form the same-sized cutlets. Grease a baking sheet with butter and put the cutlets on it. Bake them in a preheated 200 degree oven for half an hour. Instead of baking, you can fry the cutlets in a hot frying pan in vegetable oil for five minutes on each side. Serve the cutlets with mashed potatoes or boiled pasta and always with a salad of fresh vegetables. Enjoy your meal!

I made very successful cutlets. If you don't know that they are made of rabbit, then you won't immediately tell what kind of meat they are made of. Either chicken or turkey ...
But one thing is certain: if you manage not to overdo the cutlets in the oven or in a frying pan, they will turn out very tender and extremely juicy. At my cutlets, when pressed, transparent juice directly came out of the cut!
To make cutlets more dietary, you can use only egg whites. And do not add yolks at all. And use less fatty milk, for example, one and a half percent fat content.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.

Butter can be melted in the microwave or in a water bath. How to melt butter in the microwave?  Cut the butter into small pieces and place it in a special container. To prevent the oil from splashing when heated, cover the oil vessel with a paper towel. The oil should be melted either at the lowest power or in defrosting mode. At first, five seconds will be enough. Next, if the butter has not melted yet, set it again for 5 seconds and start the microwave. Repeat the process several times until the desired result.
How to melt butter in a water bath? You will need two containers of different diameters. Pour water into a large one and put it on the stove. Place the smaller container on top so that it is submerged in water by about half. Put the sliced butter into it. Under the influence of boiling water, the oil will begin to melt. Stir the oil slightly to speed up the process. As soon as the pieces of oil are completely dissolved, remove the container from the stove.
