Shortbread pie with icing and apple filling

Very tasty tender dough with sourness. Try. I really liked this pie. The recipe is relevant especially in the summer-autumn period, when apples are harvested. The cooking process is simple, no special culinary skills are required. I do not advise you to make half a portion, because the pie goes away very quickly.

Step-by-step cooking

Cooking time: 1 h 20 min
  1. Step 1:

    Step 1.

Prepare all the ingredients necessary for the dough. Butter should be well cooled from the refrigerator. Cut it into small cubes and put it in a bowl. Sift 300 gr. flour, add and grind everything into crumbs. Add plain and vanilla sugar. Sugar can be replaced with a sweetener. Instead of vanilla sugar, you can take vanilla on the tip of a knife. Be careful with its dosage. If you overdo it with vanilla, it will give bitterness to the taste.

  2. Step 2:

    Step 2.

Add large chicken eggs. Before adding baking powder, mix it with a small amount of flour, so it will be better distributed over the dough. Add the remaining flour. Note that the flour may be slightly more or less than indicated. If necessary, add flour, focusing on the desired consistency of the dough. It should be soft, elastic, not sticky to the hands. Assemble it into a ball, wrap it in plastic wrap and hide it in the refrigerator for 1 hour.

  3. Step 3:

    Step 3.

Which apples to choose? Sweet and sour, juicy fruits are best suited. Wash them, peel them and cut them into thin small plates. Or they can be grated on a special grater only with plates.

  4. Step 4:

    Step 4.

Pour lemon juice over the apple slices so that they do not darken. Transfer them to a suitable container and put them in the microwave for 2 minutes so that they become a little soft.

  5. Step 5:

    Step 5.

Take the dough out of the refrigerator. Divide it into 2 parts. Roll out one part on oiled parchment paper through a film. The size of the formation must match the size of the mold. I use a heat-resistant form 26 by 35 cm with high sides.

  6. Step 6:

    Step 6.

Together with the parchment paper, transfer the dough to the mold. Bend the edges slightly. Distribute the apples evenly. If the fruit variety is sour, you can sprinkle sugar on top of them.

  7. Step 7:

    Step 7.

Roll out the second layer of dough on paper in the same way. Put it on top of the apples (already without paper). Carefully pinch the edges so that there are no holes, otherwise the apple juice will leak out and burn during the baking process.

  8. Step 8:

    Step 8.

Preheat the oven to 180 degrees. Bake the pie for about 45 minutes. Focus on the features of your equipment, changing the time and temperature as necessary.

  9. Step 9:

    Step 9.

When the pie is browned on top, check its readiness with a wooden toothpick. Take out the form. Cool the pastries. Pour icing on top. How to cook? In a small container, mix powdered sugar with boiled water at room temperature. Pour in the water gradually, bringing the mixture to the desired consistency. The glaze should be quite thick, not liquid.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. Read a lot of useful information about flour and its properties in this article!

It is important to sift the flour to saturate it with oxygen. Then the baking will turn out to be airy and will rise well when baking.

Instead of wheat flour, you can take whole grain or first grade.

Instead of sugar, you can use a sweetener that is not afraid of heat treatment.

Keep in mind that everyone's ovens are different. The temperature and cooking time may differ from those specified in the recipe. To make any baked dish successful, use useful information in this article !

So that the oven has time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking).
