Sochniki as in childhood with cottage cheese

Taste of childhood - sochniki with cottage cheese. Cook according to the classic recipe! Mom often brought this delicacy to tea. They were stunningly delicious and seemed like a work of art. Somehow I wondered: is it possible to reproduce them at home? And, having tried a bunch of options, I still achieved that special taste "as in childhood". Today I want to share with you this sacred recipe :)

Cooking method

Cooking time: 1 h 20 min

1. To begin with, take a deep bowl, put sugar, salt there, beat in an egg and add sour cream. Beat these ingredients with a mixer until the sugar melts.
2. Add the softened butter and beat the dough base until smooth.
3. Sift the flour and mix it with baking powder. Gradually add the flour to the resulting base and first mix with a spoon, and then knead the dough with your hands. Depending on the quality of the flour, you may need more or less of it than indicated in the ingredients. The finished dough should be elastic and well behind the hands.
4. Put the kneaded dough in a bowl and cover with a towel.
5. Prepare the cottage cheese filling: cottage cheese, egg white, flour, sugar and sour cream mix until smooth.
6. Turn on the oven to preheat to 220 degrees.
7. Roll out the dough 7-8 mm thick and use a mold or bowl to cut out circles with a diameter of 8-10 cm.
8. Transfer the mugs to a baking sheet lined with parchment, put a tablespoon of filling on one side of each mug, cover with a loose dough and press down slightly, but do not pinch.
9. Brush the juicers with beaten egg yolk and put in the oven for 15-20 minutes.

Serve the cooled juicers with tea or milk.
