Chocolate cake with cottage cheese and cherries

A delicate curd layer and juicy cherry will conquer your heart! The pie turns out to be tender, crumbly and moderately sweet, so if you like it sweeter, you can slightly increase the amount of sugar in the dough or in the filling. Help yourself!

    Sift flour, cocoa, powdered sugar and baking powder into the bowl of the combine.

    Add cold butter cut into small pieces and quickly grind everything to the state of crumbs.

    Add the yolk and 1 tbsp sour cream to the butter crumbs. Mix, we should get a wet crumb, which easily gathers into a lump, if the mixture turns out to be dry, add a little sour cream.

    Collect the resulting wet crumbs into a ball.

    Divide the dough into 2 parts, one part should be larger than the other. We send the dough to the refrigerator for 15-20 minutes (or better for longer).

    Add sugar, vanilla sugar and egg yolk to the cottage cheese, mix.

    Add a spoonful of starch (semolina or flour), mix until smooth.

    Squeeze the cherry from the juice, add starch and sugar to it if desired (I did not add it), mix.

    Putting together a pie. We roll out most of the dough and put it in a mold, forming not high sides.

    We spread the cherries on the cottage cheese. If the sides are high, then cut them.

    Grate the smaller part of the dough on a grater (to make it easier to grate the dough, send it to the freezer for 15 minutes) and level it on the surface of the pie. Bake the pie at 180 C for about 45 minutes. The finished cake is allowed to cool completely and only then cut.
