Sift flour, put salt, sugar, baking powder, vanilla sugar. mix it up.

Beat 3 eggs + one yolk (set aside the white). Add water.

Pour boiling water over almonds for 10 minutes, drain the water, peel and fry in a dry frying pan.

Coarsely chop.

Combine flour and egg mixture. Knead well.

Add raisins, nuts, candied fruits and mix again.

You will get a relatively dense dough.

Divide the dough into three parts. Roll each one into a "sausage" about 4 cm wide each.

Put on a baking sheet lined with parchment paper. Lubricate each "sausage" with the remaining protein (beat it lightly).

Bake for half an hour at 180 degrees.

A crust will appear.

Remove and allow to cool slightly, cut the resulting "bars" into slices about a centimeter wide with a wide knife. Put it back on the baking sheet and put it back in the oven for 10 minutes.
