Recently my hut, in the sense of the apartment has become red-red. Can you guess why? Winter just came, and with it, gatherings in the kitchen with a table filled with food and endless tea parties with pies. One of the recipes brought as a gift by friends is a recipe for poppy pie.
The base of the pie is yeast dough.
Prepare the dough: mix fresh yeast and 1 tsp sugar, pour in a little warm water. When the yeast has dispersed, mix with wheat flour, melted butter, beaten egg yolks and sour cream. Knead the dough and leave it to ferment overnight in a warm place. In the morning, knead the dough, divide it visually into 3 parts and roll out 2/3 of the dough and place it on a greased baking sheet.
Poppy filling is prepared from steamed poppy seeds (poppy is poured with boiling water, water is drained) ground with sugar and yolks plus butter. The proteins for the filling are whipped separately. Mix the proteins and poppy seeds, put the chopped nuts, cinnamon and raisins to sleep. We spread this filling on the dough.
Cut out strips from 1/3 of the dough and make a grid on the whole pie. For shine, lubricate with beaten egg and send it to the oven for 45 minutes. The baking temperature is 210-220 degrees.
The pie is ready.
