Preheat the oven to 200 °C. In a large bowl, mix sweet potatoes with cane sugar. Put aside. In a saucepan over medium heat, melt the butter and cook it until it turns brown, about 6 minutes. Remove from heat and add red pepper flakes, sage and thyme. Pour oil over the potatoes, mix. Season with 1 tablespoon of salt and 1/4 teaspoon of pepper and mix again. Put the potatoes in one layer on a baking sheet. Spread the bacon strips on top.

Bake for 40 minutes to 1 hour, or until the potatoes are slightly caramelized. After 15-20 minutes from the start of cooking, stir the potatoes with a spatula. Put the finished potatoes on a platter. Cool for a few minutes and then sprinkle with arugula. Chop the bacon and mix with the potatoes. Season to taste with salt and pepper.
