This spectacular dish is perfect for a party that a novice cook decided to organize. Eggplant towers are suitable both for snacks and can serve as a side dish to meat. The culinary recipe of this food is simple to the primitive.
First turn on the oven and preheat it to 200 degrees. Carefully wash the eggplants, remove the stems and cut them into circles about 1 cm thick. Lightly rub each with salt and pepper.
Heat two tablespoons of oil in a frying pan and fry eggplant slices on both sides. My tomatoes and cut them into rings, also one centimeter thick. Mozzarella cheese is round, so cutting it into exactly the same circles is not a problem. Now we are building a tower - a slice of eggplant, a slice of tomato, a slice of cheese, a sprig of basil. And another layer in the same order. Cover the top with the top of the tomato. Sprinkle with a mixture of tomato juice with balsamic vinegar and olive oil.
