First take a frying pan and pour olive oil into it. Finely chop the onion and place it in a frying pan. Cut the sweet pepper into small pieces and also throw it into the pan. Next, cut the zucchini into circles and fry them on both sides as well.

Now boil the water and scald the tomatoes with boiling water. Now it will be possible to peel them from the skins without much effort. We cut the peeled tomatoes into small slices, finely chop the garlic and send it to the pan with the rest of the ingredients. Salt and fry for a few more minutes.

 Next, we spread the roast in two molds, which need to be pre-lubricated with oil. In each mold we will make a couple of grooves and put the contents of the eggs into the grooves. Grate the cheese and sprinkle it on top.

Now place the molds in a hot grill and bake for 15 minutes. When the dish is ready, sprinkle it with parsley on top and you can serve it on the table.
