Even in Georgian cuisine, I really like such a dish as chanakhi with rice. It won't take much time to prepare this culinary recipe, the main thing is that all the ingredients are at hand.
We will cook this food in a large pot. We put in it fat lamb, cut into small pieces, eggplant. Just before that, they need to be peeled, salted and allowed to stand for at least an hour, so that all the bitterness would come out. Onion, cut into half rings, salt, pepper and various herbs to taste. Pour in the water and put it in the oven. We bring it to semi-readiness. All this should take up half the space in the pot. Then we make a small recess and pour in the rice. Add coarsely chopped potatoes and tomatoes. If they are small, then they can be whole. If large, it is better to cut in half. We put it back in the oven so that our dish comes to readiness. Serve on the table in the same dish that was prepared.
In the same way, you can cook this dish with any other meat. Only if it is beef, you need to add a little more fat.
