The main product that makes waffles tasty and healthy is psyllium. Another of its names is ispagol, and in simple terms: the husk of the seeds of medicinal plantain. Psyllium is valued for its high fiber content and beneficial effects on the body. This product is widely used in cooking, and especially for gluten-free baking, as it is able to give the dough airiness and gentle porosity.

1. To make waffles, first you need to soak the psyllium in milk with a sweetener and let the mass swell (10-15 minutes).
2. Add the eggs to the mixture and beat until smooth with a mixer.
3. Add the dry ingredients and beat thoroughly again. The dough should be liquid, but viscous.
4. Preheat the waffle iron and lubricate it with a silicone brush with vegetable oil.
5. Take a ladle and pour the dough into the central cell of the waffle iron in such a way that it spreads along the grooves, and the waffle turns out to be openwork.
6. Close the waffle iron and bake until ready.
