Prepare the ingredients for the billet. Tomatoes should be taken small, ripe, but firm and elastic. Tomatoes are thoroughly washed under running water. Let the water drain from the vegetables. In each vegetable, we make several punctures with a wooden toothpick so that they do not burst when they are poured hot with marinade.
Onions are cleaned and cut into halves of rings.
Tomato paste can be prepared independently from fresh tomatoes, or use ready-made, prepared in advance at home or purchased in a store.
It is necessary to sterilize small jars in advance. It can be sterilized in any proven way: in the oven, in the microwave or in a water bath. The lids are boiled and dried.
Tomatoes are laid out in jars tightly, laying between the layers with halves of onion rings. Boil water in a kettle and pour tomatoes into it immediately. We leave them, covering the jars with lids, for 10 minutes.
Meanwhile, pour clean filtered water into a saucepan, add tomato paste. Add the peppers, sugar and salt. Put on fire, bring the mixture to a boil, stirring constantly with a spoon. Cook the marinade over medium heat for about 5 minutes.
Drain the water from the cans of tomatoes. Fill them with boiling marinade.
Cover the jars with lids and put them in a pot of water. It is necessary to put a cloth on the bottom of the pan so that the jars do not burst. The water should cover the jars up to the hangers, not higher, otherwise it will begin to pour into the jars during boiling. We put the pan on the fire. when the water boils, reduce the heat to medium and sterilize the 0.5 l cans for about 20 minutes .
Immediately roll up the cans with lids. we turn them upside down, cover them with a blanket. Let it cool at room temperature and put it away for storage in the pantry.
Bon appetit!
