The tenderest pork on a bone with mushroom sauce will melt in your mouth! This is the name from my childhood, so we called such a pork on a bone. A pig has two of these. Now they are called cutlets in Darnitsky. However, what kind of cutlets are these if it's a fillet on a bone? That's why I called them, as before, GROUSE.
