If a few lucky people have something like a dense mushroom on the surface of tea instead of white mold after a month, after a while it begins to turn green. So the only way to get a kombucha is to take its layer from a kind neighbor or buy this mushroom in a store. It is inexpensive, so it will not be difficult. There are points in Moscow where you can buy it with home delivery. Attention! It is better for people with diabetes to give up this drink! But not because the mushroom is harmful to them, it's just that there is a lot of sugar in the drink!

    Brewed tea should be ordinary, not strong, necessarily cooled. Rinse the kombucha thoroughly in clean water. If it is too thick, divide it, leaving a layer 0.5 cm thick. That is, leave only one layer. The remaining layers can either be distributed or discarded. Put the kombucha on the bottom of a 3-liter jar and pour our tea on top. To prevent the tea leaves from getting inside, do it through a strainer.

    Cover the jar with a linen napkin on top, secure it so that midges could not penetrate inside. And leave it in the kitchen away from sunlight for a day or two. The time of infusion of kombucha depends on what taste you want to get from the finished drink. If it is thicker, sharper, let it stand longer. If it is softer, then let it cost less. The same applies to the added sugar - add it to your taste.

Please note that you need to constantly take care of the mushroom, otherwise it will die and you will have to throw it away. It is enough to wash it once every 2-3 days, as often as possible. And transplant into a fresh brew.
If you are going away for a week, you can leave the kombucha in the refrigerator.

For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
