Broccoli puree soup with cheese

A wonderful dish for dinner! Prepare, surprise your family! We haven't had time to get tired of the mashed soup yet. It has a rich taste of the main component (in this recipe it is broccoli), and by supplementing it with toasted brisket and crackers, you will get a real restaurant dish. My daughter just asks: "Mom, I like soup in a restaurant!"

Start cooking:

- peel the onion, rinse, cut into small cubes, fry in butter until soft and transparent (no need to wait until the onion is gilded, this recipe does not need it);

- we thoroughly wash the cabbage, cut it into inflorescences, put it in a small saucepan with onions;

- add salt, ground black pepper, pour boiling water, cook the soup over medium heat for about 20 minutes until the broccoli is fully cooked (pierce one of the inflorescences with a fork - if soft, then the cabbage is ready);

- three cheese on a grater, spread in the soup and grind everything together with an immersion blender until completely homogeneous;

- add ground nutmeg to the resulting mass, pour cream;

- pour the soup on plates (it is advisable to warm up a little before serving), add the fried brisket. Serve with crackers.
