Cauliflower is a dietary vegetable, loved by many for its large amount of nutrients and ease of preparation. It does not need to be cooked for a long time, and there are countless delicious dishes based on it. One of the easiest and fastest dishes is a cauliflower casserole with cheese and cream sauce and an appetizing crispy crust.

To prepare a casserole, you will need to wash the cauliflower, dry it and disassemble it into inflorescences. In a large saucepan, boil water and throw in the vegetable. Boil the cabbage over medium heat for 5-6 minutes from the moment of boiling, drain the water and throw it into a colander so that all the water runs off.

Turn on the oven at 200 degrees.

Cook the casserole sauce. To do this, melt 80 grams of butter in a frying pan with a thick bottom over medium heat. Stirring constantly, add flour and dissolve it in oil. Add salt, pepper and continue to boil the sauce for another couple of minutes. Gradually pour the milk into the pan, constantly whisking the sauce to get a homogeneous mass.

Grate the cheese on a fine grater and add it to the sauce, put French mustard in the same place. Mix everything thoroughly again until the cheese melts and the sauce becomes homogeneous. Then remove the sauce from the heat.

Grease the baking dish with butter.

Put the boiled cauliflower in a frying pan and cover each piece with cooked sauce. Transfer everything to a deep baking dish.

Pour the breadcrumbs into a bowl. Wash, dry and finely chop the parsley. Combine breadcrumbs with herbs and add paprika. Melt the remaining butter in a water bath or just in the microwave and also pour it into a bowl with breadcrumbs. Mix well. Put the breadcrumbs mixture on top of the cauliflower. This top layer provides an appetizing crispy crust to the finished casserole. Crackers, if desired, can be replaced with finely chopped nuts (walnuts, almonds).

Put the casserole in the preheated oven for 15 minutes or until an appetizing golden crust forms on top.

Cut the finished casserole into portions and serve to the table. Baked cauliflower with cheese is equally delicious both hot and cold. Bon appetit!
