Giant squid fried with onion and sour cream

Juicy squid in sour cream sauce – surprise your loved ones. I like this dish better when it's hot. But I'll make a reservation – for an amateur. The consistency may be a bit "rubbery", but it's still delicious. Sometimes you can find fillets of giant Far Eastern squid in stores. No, it's not the same as an ordinary small squid. Its preparation requires certain specifics.

Squid meat needs to be soaked for a long time. To do this, a teaspoon of soda is diluted in a liter of water and the fillet is left in it (frozen) for several hours, or overnight.

Then in the same water (or in fresh with a new portion of soda) cook for 2-3 minutes. Be careful – there will be a lot of foam at once. You will feel an unpleasant ammonia smell – that's right, that's how it should be. That's what we boil down.
After that, the squid is cooled in the air (I do it in a colander).
Now you can cut it into strips and, with salt and pepper, fry it with onions.
When is meat (or fish? Who knows?) fry, add half a cup of sour cream. It is not necessary to fill the frying pan with it, it should fit into the dish and not create excess liquid. A couple of minutes under the lid – and the giant squid can be served to the table, both independently and with a side dish.
