To cook this exotic soup, we will need a rather exotic fish. But what to do, this is Italian food and it requires the appropriate ingredients. But despite the complexity, I recommend everyone to try this wonderful soup. The culinary recipe for this soup seems complicated, but in fact it is not.
The most important thing in this dish is fish broth. Let's deal with him first.
In a large saucepan, place the cut onion and the bones and heads of the fish without gills. Add celery, bay leaf and pour two liters of water. Bring to a boil and remove the foam. And then continue to cook until the broth is ready for about 30-40 minutes.
Finely chop the rest of the onion and put it in a frying pan with heated oil. Fry the onion until golden brown and pour vinegar into the pan. Continue to fry for another 2 minutes. Then, add tomatoes, a little sugar, salt and pepper. Simmer on low heat for another 15 minutes and the roast is ready.
Meanwhile, if the broth is ready, strain it through a very fine sieve into a saucepan to separate the fish bones.
Add the roast to the pot with the broth. Bring the soup to a boil. Next, add pieces of all kinds of fish to the soup, a tablespoon of greens, squid, bring to a boil.
Let's make toast from bread, break them into small pieces and put them on plates. When the soup is cooked, we pour it out. On top, add the remaining parsley to the plates and the Adriatic fish soup is ready.
