Mushroom caviar from honeydew for winter with green onions

A great idea for a snack for the winter! Suitable for any table! To make excellent caviar from honeydew for the winter, we select strong, fresh mushrooms with whole legs. This culinary recipe, by the way, I inherited from my grandmother. She was very fond of harvesting mushrooms. This is traditional Russian cuisine, as far as I know.

To begin with, we sort out the honey mushrooms, after they are thoroughly washed and put to cook until ready. After that, we drain the water from the mushrooms, and send them to the frying pan in vegetable oil to fry. Fry until all the water from the mushrooms evaporates. As soon as this happens, we remove it, let it cool down and pass it through a meat grinder. Chop the onion very finely and fry it in the oil in which the honey mushrooms were fried before. Salt and pepper to taste, at the very end of cooking, add chopped green onions. Keep on fire for about a minute, pour vinegar, fry for another minute, stirring, and immediately remove. Mix mushrooms with onions and put them in prepared jars. Separately, we heat the sunflower oil and pour it over the mushrooms so as to close them completely. We sterilize the jars and then roll them up. Such food is usually stored in a dark, cool place. It is used both as a ready-made snack and as a filling for pies. In principle, you can even cook soup from such mushrooms, only add them at the very end.
