    Divide the dough into 3 parts, roll each into a round layer. We level the plate (I have a diameter of 24 cm) and cut into 12 equal segments. From the scraps I got another layer. Sprinkle the segments with zest and sugar. You can also walk a little with a rolling pin so that the filling sticks a little.

    Roll the bagels from the wide end to the narrow one. We put it on a sheet covered with oiled parchment. Top each bagel with beaten egg and sprinkle with the remaining sugar. I got 48 small bagels.
