1. How to make a Three Chocolate cake with mascarpone?
Prepare the base for the cake. Take the eggs, break them into a bowl (it is advisable to get the eggs out of the refrigerator in advance so that they are at room temperature), add sand and whisk until a fluffy foam forms. Separately, sift the flour with cocoa and add parts to the dough. Whisk everything again.
Bake the sponge cake in a split, oiled form, at 180 degrees for 10-15 minutes.

So that the oven has time to heat up to the desired temperature, turn it on in advance (10-20 minutes before the start of cooking).

2. Beat the cream with powdered sugar, until stable. Add cheese (Mascarpone, also at room temperature) and we continue to whisk. The resulting mass is distributed over three dishes and put in the refrigerator.

How to whip cream correctly? It is important that the cream is fat, at least 33%. The whipping dishes and the cream themselves should be cold, keep them in the refrigerator for at least 1-2 hours. Beat with a mixer at minimum speed, gradually increasing the speed. How do I know if the cream is whipped enough? The creamy mass should retain its shape and not spread. At this point, stop whipping. Otherwise, the cream will turn into butter.


3. For the chocolate cake, melt dark chocolate in the microwave, add diluted gelatin. Mix with one part of the cream.

4. Cooled sponge cake, put in a detachable mold and sprinkle with brandy. Spread the mousse with dark chocolate on top and put it in the refrigerator.

5. We do the same with milk and white chocolate. We distribute it in the form and again remove the refrigerator for a few hours. Before gelatin solidifies.
