    We will prepare the dough in a quick way, but on sourdough. In a bowl with warm milk (we heat it in a microwave oven), dissolve dry yeast, a tablespoon of sugar and a tablespoon of flour. Stir thoroughly and put the bowl in a warm place for 15 minutes.

    Meanwhile, melt the butter in a water bath or in a microwave oven. We let it cool down to a warm state so that the yeast does not "kill" hot.

    Foam and bubbles appeared on the surface in a bowl with sourdough, which means that the sourdough is ready. Pour warm butter into the sourdough, mix.

    In another bowl, drive the chicken egg and beat it with salt with a fork, no need to beat it to foam, you need the egg to turn into a homogeneous mass. Pour the egg mixture into the sourdough, mix. Add sugar.

    Pour the sifted flour into a bowl. Pour it in parts, stirring the dough each time. First we do it with a spoon. As the dough becomes tight, we begin to knead it with our hands. It should be elastic and stop sticking to the edges of the cup. Cover the cup with the dough with a towel and put it in a warm place for 1 hour.

    After an hour, the dough should double in volume. We divide it into ten identical pieces. We make a ball out of each one.

    Flatten the dough balls with your hand into a flat cake. If the dough still sticks to your hands, then you can lubricate your palms with vegetable oil. We spread the blanks of crumpets on a greased baking sheet with vegetable oil, if we plan to bake them in the oven. If the crumpets are fried in a frying pan, then leave them on the board for lifting for 15 minutes.

    When the crumpets increase slightly, bake them in the oven at a temperature of 180 degrees until browned or fry in a frying pan on well-heated vegetable oil.
