All this is thoroughly whipped at low speed until a homogeneous mass is obtained. In a separate bowl from the mixer, we begin to beat the proteins, add tartar to them, the remaining sugar and whisk until a dense white mass is obtained.

    Carefully mix the dough with the proteins. We take 12 metal or paper baking molds.

    Metal parts must be lubricated with oil. And fill them evenly with dough. Bake for about 20 minutes until light brown at 120-150C My molds are very small (diameter 2 cm.))

    Make the glaze. In a mixer, mix butter, milk or cream. At low speed, we drive in powdered sugar. Add the milk and whisk until smooth at high speed for about 5 minutes. At the same time, food coloring can be added to the glaze. Cover the pastry with icing using a spatula. Sprinkle with multicolored powder on top
