A simple casserole in the microwave

Express casserole is an ideal lunch option when there is a shortage of time. Quickly, you can cook this casserole in the microwave, a great dish for fasting (lean mayonnaise) or for an empty refrigerator. Quite often I make casseroles in the oven, but sometimes you need to cook something very quickly, then I experiment with a microwave oven and different vegetables. We really love potato casseroles with juicy vegetables, especially with onions, carrots, bell peppers, tomatoes and cabbage.

1. All vegetables are cut into thin plates.
2. Mix potatoes with lean mayonnaise, salt, pepper and coriander.
3. We put a layer of potatoes in a special dish for a microwave oven, then layers of vegetables in any order except tomatoes. Salt the vegetables.
4. We spread a layer of potatoes and a layer of tomatoes, cover everything with the last layer of potatoes.
We put it in the microwave for 20 minutes, not at the maximum, but at a power above average.
5. We give the finished casserole to reach in the microwave (do not open and do not take out the dishes).
6. For the casserole, you can make a vegetable salad with radishes, fresh cucumber, pepper, etc. and with any dressing.
