First peel and cut the onions into rings, then fry them in olive oil until transparent. Pour vinegar into the pan, season with salt and pepper. Simmer for 5 minutes. Roll the sardines in flour and deep fry them for 10 minutes. Transfer the fried fish to a paper towel to remove excess oil. Then transfer the sardines to a deep dish and cover with a layer of onion. Alternate a layer of sardines and a layer of onions. Then pour the sardines with the liquid in which the onion was stewed. Cover the dishes with cling film and put them in the refrigerator for a day. You can serve pickled sardines with pickled onions.
