Classic kharcho with beef rice

Thick rich soup for real gourmets! Kharcho soup is a very satisfying dish that came to us from Georgia. The classic recipe has undergone some changes and the soup is cooked in different ways. But no variations will replace the real Georgian kharcho, so I suggest cooking the soup as it should be: with tkemali and nuts, as well as beef.

Cooking method

Cooking time: 3 h 30 min

Prepare a "strong" broth: wash the beef, pour water (1.5 liters) and boil until fully cooked - about 2 hours. Then we separate the meat from the bone, cut into small pieces and return to the broth.

At this stage, we introduce tkemali into the broth, mix. Peel the onion and carrot, cut the carrot into cubes, and the onion into strips. Let the soup boil and add the prepared carrots, cook for 10 minutes, then spread the onion, cook for 25-30 minutes.

Meanwhile, let's take care of the nuts: grind them in a mortar. And also garlic: peel, pass through the press (you can grate or grind in a mortar).

Pour the washed rice into the soup, cook strictly for 10 minutes, then pour the garlic-nut dressing. Cook the kharcho for another 15 minutes, after which we enrich it with spices: hops-suneli, coriander, ground black pepper. Do not forget about salt! All the time, the soup should be on very low heat, since it is thick in consistency and can burn.

We wash the greens (parsley, dill and cilantro), finely chop them, put them in kharcho, keep them on fire for another minute or two and remove.

Kharcho just needs to be given time to brew, at least 5-10 minutes.
