The romantic name "consomme" hides the most ordinary food - chicken broth. However, not quite ordinary, but double clarified broth. That's the trick. And the recipe for consomme is more time-consuming than the usual chicken broth.
We separate about 300 grams of pulp from the total amount of chicken meat. And all the rest of the meat we cook ordinary broth. Celery, parsley and carrot roots are very thinly cut and fried in vegetable oil until golden brown. As soon as we have removed the foam from the broth, we immediately throw in the fried roots and carrots., as well as the whole onion and well-washed, tied in a bunch of greens. Cook the broth over low heat, without allowing a large boil and without closing the pan with a lid. The remaining meat is twisted into minced meat mixed with whipped proteins. When the meat is cooked in the soup, we lower the minced meat into the broth. As soon as the soup is cooked, filter it through four layers of gauze. Boil again and soak a little in a steam bath.
Making profiteroles. Knead the dough and roll it into small balls. And then bake in the oven until golden brown.
We serve consomme in cups. Add profiteroles to the broth.
