Salad with chicken, peaches, mozzarella and arugula

Summer salad of berries, meat and cheese with a wonderful dressing. I saw this salad in a culinary magazine. All the ingredients were at hand, so I decided to cook it right away. Individually, all the ingredients are delicious, but in this combination it turns out to be a real delight for the gourmet.

    Prepare the ingredients. To prepare a salad with chicken, peaches, mozzarella and arugula, we will need: chicken fillet, a bunch of arugula, ripe peaches, a handful of berries (I have raspberries, gooseberries and a little cherry), mozzarella, ground black pepper and salt and olive oil for roasting chicken.

    Chicken wash the fillets, dry them, and cut them into medium slices. Sprinkle with salt and pepper (I also added a little paprika for color).

    Fry the chicken fillet in a frying pan in olive oil until golden brown.

    Wash and dry the berries. Remove the tails. Remove the seeds from the cherries.

    Wash the peaches, dry them and cut them into thin slices.

    Refueling. To prepare the dressing, we will need: olive oil, lime juice, balsamic vinegar, ground black pepper and salt.

    Mix olive oil, balsamic vinegar and lime juice. Beat everything thoroughly with a whisk until smooth. Add ground pepper and salt and mix.

    Put arugula, mozzarella balls, chicken pieces and sliced peaches on a dish. Sprinkle the salad with berries. Pour the dressing over the salad and serve. Enjoy your meal!

Instead of balsamic vinegar, you can use ready-made balsamic sauce, then the dressing will turn out to be more viscous and fragrant. You can not fry the chicken, but rub it with spices and bake it whole in the oven. In addition to arugula, you can use any other salad leaves or a ready-made salad mixture.

Arugula is a spicy salad, on the basis of which you can prepare a lot of delicious, healthy and interesting salads. And salads with it are also very beautiful and elegant. Arugula goes well with fruits and berries. And the salad I offer clearly demonstrates this.

It's hard to believe that this salad plant was once considered a weed. However, now there is practically no cafe or restaurant in the menu of which there is no salad, which includes arugula.
