In principle, you can use any mushrooms - both salty and fresh, of different types. These pancakes will be the perfect hearty and delicious breakfast or dinner. They can also be served to guests. The peculiarity of the recipe is that it is proposed to prepare a universal flour mixture. It can be stored for a long time and used as needed, which is convenient, practical and saves time.

First we will prepare a universal flour mixture. It can be used for pancakes, pancakes, tortillas, cookies and other flour products. To prepare it is extremely simple: in a medium bowl, mix the flour sifted in advance with baking powder, soda, sugar and salt. Mix thoroughly, then transfer to a sealed plastic bag (with zipper).In a dry and cool place, this mixture is stored for 8 months. You can make it in any quantity, just proportionally increasing the number of ingredients.

And now you can proceed directly to the preparation of pancakes. To begin with, we put salty bitters in a colander (these are mushrooms that look like mushrooms and are ideal for salting), rinse well from excess salt and leave it over the container so that unnecessary moisture runs off. Then we cut the mushrooms into pieces, if they are large, small ones can be left whole. Bitters can be replaced with any other mushrooms - both salted and fresh (the latter must be boiled and / or fried beforehand).

I wash fresh thyme and green onions, dry them with a paper towel and chop them finely. We put it in a small bowl for now. We also add chopped mushrooms, pour olive oil, add salt and ground black pepper. Mix everything well and leave it to stand for a while.

Take 240 grams of universal flour mixture, pour it into a large container, beat it a little with a fork (if you prepared the mixture some time ago) to saturate it with air. This will allow you to get more lush pancakes. Pour the milk there, break the eggs and beat everything well until smooth.

Heat the frying pan over medium heat, lubricate it with olive oil before the first use. When the frying pan is hot enough, we put two tablespoons of dough on it, and a spoonful of filling on top. We distribute the filling on the surface of the pancake, slightly pressing. Fry for 3 minutes (until golden). Then turn the pancake over and fry for another 2-3 minutes.

Ready-made pancakes are laid out in a stack on a flat wide plate, lubricate each with melted butter (optional). We serve it to the table hot.
