Delicious and very nutritious dish with delicious spring mushrooms. Lines, like morels, grow only in spring, and the first ones at the very beginning of April. In general, mushrooms are conditionally poisonous, and even dangerous in fresh form - we always boil them several times, changing the water each time. And it would also be good to soak them for at least 15 minutes so that insects that may be inside the stitch hats crawl out.

To prepare this dish, soak pearl barley overnight. Mushrooms also need to be prepared, namely: thoroughly wash and check for insects, cut into large pieces and boil for 40 minutes, drain the water, rinse the mushrooms under running water and squeeze well. Do not neglect this stage, since it is impossible to eat lines without preprocessing.
From the pearl barley, you also need to drain the liquid in which it was soaked, then rinse the grits and leave to dry a little.

Actually, the preparation of the dish:

1. Peel the onion, then chop it into medium pieces.
2. Cut the washed and dried celery into small pieces.
3. Now the prepared vegetables need to be fried, heating the pan well with vegetable oil.
4. Put the mushrooms, continue cooking all together, stirring for 7-10 minutes.
5. Add grits, butter, spices and salt. Mix everything well.
6. Put the contents of the pan into a baking dish, pour hot water so that everything is covered with liquid. The water level should be about 1.5 cm above the grain level.
7. Put the foil-covered mold in the oven, preheated to 190 degrees for 40 minutes (until the cereal is ready). Turn off the heat and hold the finished dish in the cooling oven for another 25 minutes, after which it can be served with fresh vegetables and herbs, your favorite sauce.
