    It makes sense to make moonshine from birch sap if you have several liters of such juice available. If you collect the juice yourself, then collect the juice as high as possible from the ground along the trunk of the tree - such juice is much sweeter. For the preparation of braga, instead of water, we will take birch juice. Yeast is fresh pressed, can be replaced with wine yeast.

    Break the yeast into pieces, add a spoonful of sugar.

    Dilute with warm water (the temperature is not more than 40 degrees to preserve the activity of yeast). In addition, the water must be unfiltered and unbutylated.

    Pour birch juice into the fermentation tank.

    Wait for the formation of a foam cap on yeast and pour it into a container for braga.

    Put a disposable glove on top or put a water seal. Remove to a dark, cold place where the temperature is 20-25 degrees and leave for 10-16 days.

    As soon as the glove inflates, fermentation has begun. It can last up to three weeks. As soon as the glove is deflated, the braga is ready for distillation. It is not necessary to filter it, because no large fractions are present in it.

    Assemble the moonshine machine according to the instructions. If provided by your model, connect the hoses with cold water.

    Pour the braga into the moonshine machine. Put it on the fire. As soon as the temperature reaches 70 degrees, turn on cold water for cooling. During the distillation process, do not allow heating above 80 degrees. Collect moonshine in a jar. After the first distillation, the moonshine is ready for use, but has a bright moonshine taste and aroma. Therefore, to obtain a cleaner product, I recommend a second distillation.

    To do this, dilute the resulting moonshine with clean water to a fortress of 20 degrees. If you do not have an alcohol meter, take 400 ml of pure water for 1 liter of moonshine. Pour into the moonshine distiller and repeat the distillation procedure, but keep in mind that the first 100 ml and the last 100 ml of the newly obtained moonshine must be poured out - this is the most harmful substance that can even be poisoned. Pour the remaining resulting juice into bottles and let it brew for a couple of days.

    You can tint the moonshine with a drop of tea leaves. But I like it more clean and transparent, like a tear! Observe the measure when drinking alcohol!
