It would be good to collect butter yourself, so you will be sure that there are no worms and that they are not collected along the roads. But you can also buy at the market, here as you are lucky.. In the recipe I will use only salt, so as not to interrupt the delicate mushroom taste. If desired, you can use pepper, garlic, sour cream and greens when serving.

    Mushrooms should be cooked on the day of harvest. It is better to clean the butter dry. It is necessary to pry the cap film with a knife from the edge and remove it to the center, scrape the leg and update the cut. Cut large mushrooms in half or quarters, leave small ones whole. Rinse the prepared mushrooms with cool running water, especially carefully rinse the inside of the cap, the water pressure should be small.

    Put the washed mushrooms in a saucepan, pour cold water, bring to a boil and add a little salt.

    Reduce the heat to minimum and cook for 15 minutes from the beginning of boiling, remove the foam.

    Then put the mushrooms in a colander, rinse with cold water and let it drain.

    In a separate frying pan, fry the onion, cut into quarters, so that it just starts to blush.

    In another frying pan, heat 3 tbsp.l. oil, reduce the heat to medium. Fry the mushrooms until the liquid evaporates, add the onion and fry until the mushrooms begin to blush, do not over-dry. Do not cover with a lid.

    I fry potatoes separately. You can also pre-boil it, then fry it, as in the Polish recipe. Fry without covering with a lid, add salt to taste.

    Add mushrooms and onions to the finished fried potatoes, mix gently. Taste it, add salt if necessary and fry everything together for 5 minutes so that all the flavors come together.

    Sprinkle finely chopped herbs on top. It will be delicious with sour cream with garlic, which can be served separately or poured on top. Serve hot.

You can fry butter with potatoes in different ways.

You can fry in one pan, throwing first mushrooms, then onions, then potatoes. It will be necessary to cook under the lid, then remove it. You can also add boiled or raw potatoes, but you need to cut them smaller so that they are fried at the same time with mushrooms.

I like the option when we fry all the ingredients at the same time, but separately, because the mushrooms do not dry out, they remain tender.
Buttermilk for this option in the season I use fresh, and during the year - frozen, pre-boiled and fried.

Instead of fresh, you can take frozen or dried mushrooms (dried ones will need 5-6 times less than fresh ones). Frozen mushrooms can be defrosted in any convenient way (for example, in the microwave in the appropriate mode - see the instructions for your technique) and drain the liquid. Or, if the amount of liquid in the recipe is not critical, use without defrosting. Dried mushrooms should be washed well, since they are not washed before drying, and then soaked in cold water for at least 2-3 hours.
