    How to make a caramelized cake with bananas? Prepare the products. Cookies will suit any shortbread, such as Jubilee. Cream must be fat, at least 33%, natural and high-quality. Also butter, choose a product without milk fat substitutes.

    Prepare the sand base for the cake. Chop the cookies into crumbs using a meat grinder or blender. You can use a rolling pin. Melt the butter in any available way and cool it. Combine the cookie crumbs with the melted butter and mix them thoroughly so that all the crumbs become wet.

    Take a detachable pastry ring for the future cake, set a diameter of 18 centimeters and pour crumbs soaked in oil inside. Tamp the crumbs, forming the bottom and sides of the future cake. Put the mold with the base in the refrigerator for 2 hours. If there is no pastry ring, you can also use a baking dish with a small diameter.

    Prepare the caramel. Pour granulated sugar into a saucepan with a thick bottom, put the pan on fire and melt the sugar until it completely dissolves and acquires a beautiful amber color.

    Reduce the heat, pour in the heated heavy cream and mix. Remove the pan from the heat, add the butter and stir until completely dissolved. Add salt and boil the caramel for another 2 minutes over low heat. Cool the caramel to room temperature,

    Put the cooled caramel on the sand base, setting aside 1 tablespoon for the cream.

    Peel the bananas and cut them into circles. Place the sliced bananas on top of the caramel.

    Prepare the cream. Beat the cooled cream into a strong foam, starting with small turns and gradually moving to the maximum. Gradually, in the process of whipping, enter powdered sugar into them.

    Using a mixer, mix the soft cream cheese and the left-over caramel.

    Gently mix the whipped cream with caramel cream cheese with a silicone spatula.

    Put the resulting cream on a layer of bananas, sprinkle the top of the cake with chocolate chips on top. Put the cake in the refrigerator for 2 hours to cool and stabilize. Then serve to the table. Bon appetit!

To prepare cream as a soft cheese, I recommend using Philadelphia or Mascarpone cheese, you can also use other curd cheeses, but they must be soft. They can even be a little salty, which will give an additional zest to this dessert.
You can also add a pinch of salt to the sand base. Another very interesting cooking option would be to add crushed salted straws to the sand crumbs. In general, there is still a place to turn around!

How to whip cream properly? It is important that the cream is fat, at least 33%. The whipping dishes and the cream themselves should be cold, keep them in the refrigerator for at least 1-2 hours. Beat with a mixer at minimum speed, gradually increasing the speed. How do I know if the cream is whipped enough? The creamy mass should retain its shape and not spread. At this point, stop whipping. Otherwise, the cream will turn into butter.

Butter can be melted in the microwave or in a water bath. How to melt butter in the microwave?  Cut the butter into small pieces and place it in a special container. To prevent the oil from splashing when heated, cover the oil vessel with a paper towel. The oil should be melted either at the lowest power or in defrosting mode. At first, five seconds will be enough. Next, if the butter has not melted yet, set it again for 5 seconds and start the microwave. Repeat the process several times until the desired result.
How to melt butter in a water bath? You will need two containers of different diameters. Pour water into a large one and put it on the stove. Place the smaller container on top so that it is submerged in water by about half. Put the sliced butter into it. Under the influence of boiling water, the oil will begin to melt. Stir the oil slightly to speed up the process. As soon as the pieces of oil are completely dissolved, remove the container from the stove.
