Step-by-step cooking

Cooking time: 2 h 20 min
  1. Step 1:

    Step 1.

    Measure the ingredients.

  2. Step 2:

    Step 2.

Soak gelatin in 40 ml of water.

  3. Step 3:

    Step 3.

Punch the cottage cheese well with a blender so that there are no lumps.

  4. Step 4:

    Step 4.

Add milk, sugar and vanilla sugar to the cottage cheese. Beat well with a blender until smooth.

  5. Step 5:

    Step 5.

Heat gelatin (in a water bath or in a saucepan with a thick bottom over very low heat) until dissolved.

  6. Step 6:

    Step 6.

With constant whipping, pour a thin stream of warm gelatin into the cottage cheese. Stir quickly so that no lumps form.

  7. Step 7:

    Step 7.

Spread the curd mass into molds and refrigerate for 2-3 hours.

I made 2 types of souffle: regular and chocolate. To do this, I first added gelatin and put half of the mass into a mold (200 g). I sifted 15 g of cocoa into the remaining cottage cheese and stirred it quickly. I put the chocolate mass in the second mold. It was a spontaneous decision, so there was a high probability of the formation of lumps, because gelatin had already begun to set, but it worked))

In general, it is better not to violate the technology and first add all the necessary ingredients to the cottage cheese (nuts, fruits or cocoa), and only then add the melted gelatin.

For 400 g of cottage cheese, you need no more than 30 g of cocoa (and 25 is better), otherwise it will be bitter.
