Classic beef shurpa on the stove

Prepare the signature dish of Uzbek cuisine! I offer you a recipe for a very tasty first dish called shurpa, which my husband taught me to cook. Shurpa is a camping soup that is brewed in the field, but it can be successfully prepared in an urban kitchen. The peculiarity of this dish is that all the ingredients are cut very large - this adds a special charm to the shurpa)

Cooking method

1. Pour cold water into a saucepan, put the previously washed pieces of meat on the bones into it (cut the meat coarsely) and bay leaf, cook for an hour and a half from the moment of boiling, periodically removing the foam from the surface of the broth.

2. Potatoes (it is better to take small tubers) and carrots are cleaned, washed. We will not cut potatoes, but we cut carrots lengthwise into 4 parts. Peel the onion, cut into large cubes. Peel the pepper from the seed pod, wash it, cut it lengthwise into a couple of parts. On tomatoes, we make an incision crosswise and pour boiling water over them, after which we remove the skin (after such a procedure, it will be easily removed) and cut the pulp into large slices.

3. The prepared ingredients (except tomatoes) are sent to the broth and cooked for 20 minutes, after which we add tomatoes and cook for another 5 minutes. Now we salt and pepper the fragrant dish to your taste, and also add ground paprika.

Let the dish brew under a closed lid for 10-15 minutes, pour into plates and add fresh parsley to each. That's it, you can have a meal)
