Many people know what candied fruits are. These are berries or fruits cooked in syrup. Candied fruits are a very tasty treat, they can be treated to children instead of sweets. Candied fruits are also added to pastries: sponge cakes, pies, cupcakes. Candied fruits can be used as a decorative element, decorating cakes and pastries with them. So the dish is pretty versatile. This recipe describes the process of cooking candied cherries. They turn out just wonderful!

In order to prepare candied cherries, it is worth choosing the right kind of berries. Sour berries will have a sourness, and sweeter ones will be sweeter, respectively.

1. Wash the cherry under running water, remove the bones. It is important to sort out the berries beforehand, they should be whole, not suppressed, without traces of spoilage.

2. Pour water into a saucepan, send it to the fire. When the water boils, pour sugar into it, mix until it completely dissolves. Boil the syrup for 5 minutes.

3. We put the peeled cherries in a bowl, pour the syrup. We leave it for 6 hours. During this time, they will absorb the syrup and release the juice.

4. After the specified time, we put the berries in a saucepan and send them to the fire. Cook for 10 minutes from the moment of boiling. Then leave to infuse for 5 hours.

5. Then we cook the berries again, this time they should lighten, and the syrup will become thick. At this stage, we throw the cherry into a colander and leave it for an hour and a half. All the syrup should drain.

6. Pour the cherries on a sieve in one layer, leave for 5 days in a well-ventilated room. You can sprinkle future candied fruits with sugar, but this is optional. There is also an option of drying berries in the oven, it is faster. But the berries dried in the oven turn out darker.

7. Put the finished delicacy in a clean, dry glass jar, cover with a lid. We store it in a cold place. It can also be stored in a cellophane bag with a tight clasp, but also in the cold.
