1. Carefully wash the pomelo, dry it, carefully remove the zest without affecting the white pulp. Cut the zest into cubes.

3. We repeat the blanching process three times, so the pomelo peel will lose its characteristic bitterness.

4. Prepare the syrup, for this we pour water into a saucepan, send it to the fire. When the water boils, pour sugar into it, wait for its complete dissolution.

5. Spread the zest into the syrup and cook on low heat for an hour and a half, all the liquid should be absorbed, and the zest cubes will become transparent.

6. The treat is almost ready. Spread the candied fruits on a sheet of parchment or on a grate, sprinkle with sugar, leave for 3 hours to dry, turn over from time to time for a more uniform drying.

Ready candied fruits are stored in a closed container in a dry place.
