Coffee in turk with foam

Delicious, fragrant and invigorating coffee, brewed according to all the rules! I love this drink and especially if it is brewed in Turkey. I cook it on the sand, for which I have specially allocated a frying pan, and every morning begins with this pleasant ritual - the preparation of a fragrant drink in an oriental style in a Turk. And necessarily - thick foam on top.

Cooking method

1. Pour sand into a cast-iron frying pan and heat it, stirring constantly so that it warms up evenly.
2. Make a small depression in the center and put a turk with water in it. The water should be poured cold.
3. Rotate the turk in a circle - you need the water to heat up, then add coffee.
4. Let the turk with the future fragrant drink stand on the sand. At this stage, you need to add spices and sugar, if you decide to use them.
5. Warm the turk with coffee by lifting it up and putting it on the sand. When the coffee "cap" starts to rise and will be almost at the edge of the Turks, lift it from the sand and knock the cap down, lightly and briefly tapping the bottom of the Turks on the table.
6. When the "cap" settles, return the Turk to the sand and repeat the same thing several more times. The more times you repeat, the stronger the drink will turn out.
7. Put the foam in a cup and, after waiting for the Turk to cool down a little, pour it into a cup of coffee.
