Step-by-step cooking

Cooking time: 10 min
  1. Step 1:

    Step 1.

Prepare the ingredients for making the sauce. Take mayonnaise with the highest percentage of fat content you can find. You need a very thick mayonnaise. Instead of chili sauce, ground pepper will do, take half a teaspoon. If there is no sesame oil, use regular vegetable oil. But it tastes better with sesame. Capelin caviar is a fairly rare product on store shelves. I took a smoked version in sauce, this is sold everywhere.

  2. Step 2:

    Step 2.

Take a small bowl. Put mayonnaise in it, add chili sauce.

  3. Step 3:

    Step 3.

Mix the products with a silicone spatula. It is most convenient to stir it - it cleans the walls of the dishes very well and does not affect the structure of the products being stirred.

  4. Step 4:

    Step 4.

Add sesame oil and soy sauce. Mix everything again until smooth.

  5. Step 5:

    Step 5.

Peel the garlic cloves. Grate it on the smallest grater immediately into the sauce. Or pass it through a garlic press. Mix well.

  6. Step 6:

    Step 6.

The last addition will be capelin caviar. If you suddenly buy caviar of flying fish - tobiko, it will be fine! Real spicy sauce is made with it. It is sometimes found on sale. If not found, look for capelin caviar. If you haven't found capelin, use any fish caviar. The main thing is that it should be shallow.

  7. Step 7:

    Step 7.

Finally mix all the ingredients. The sauce should turn out to be very homogeneous, silky consistency, delicate light salmon color. The sauce is ready to use. If you want to bake rolls or sushi with it, then put a spoonful of sauce on top of them and bake for 5-10 minutes.

Cooking sauce for homemade rolls. Very tasty, spicy, rich. Both cold and baked.

Since the degree of salinity, sweetness, bitterness, sharpness, acid, burning is individual for everyone, always add spices, spices and seasonings, focusing on your taste! If you put some of the seasonings for the first time, then keep in mind that there are spices that it is especially important not to shift (for example, chili pepper).
