In Moldovan cuisine, dishes from fresh zucchini are prepared almost all year round in all kinds of variations. I want to offer to your taste a culinary recipe that has taken root in our family since a very long time. He is a frequent guest not only at our festive table, but also at everyday. The dish is prepared in two stages. Peeled, cut into medium-thick slices of zucchini, roll abundantly in flour on both sides and fry in preheated vegetable oil in a frying pan with a thick bottom. We prepare garlic sauce separately. Add the washed and finely chopped fresh herbs to the sour cream (dill gives a good taste combination) and send the peeled crushed garlic the same way. Add salt. Mix it up. And now the actual preparation of cakes: we lubricate the zucchini with sauce and put fresh tomatoes on it, also cut into thin circles. Again we lubricate the sauce, and again the zucchini. Top the zucchini with sauce and decorate with herbs. Fried zucchini is served cold as an appetizer. I prepare this dish for the New Year's table, having previously (in summer) frozen sliced zucchini. It is necessary to fry frozen zucchini without preliminary defrosting. Bright, elegant, summer food will decorate your table during the winter holidays. We give our squash cakes a little soak so that they become even tastier and juicier. As my long-term practice shows, such a snack vegetable dish will become one of the most popular among other dishes on the festive table, especially in the winter season.
