Lines fried in sour cream

Delicious and bright spring dish - lines with creamy taste. In general, the lines are not considered edible mushrooms. Moreover, they are even considered poisonous, especially if they are improperly processed. Therefore, this dish is only for experienced mushroom pickers. We eat it every year in May, because it's amazing - spring has just arrived, and you can already go to the forest for mushrooms. In general, mushroom pickers will understand me :)

To begin with, the mushrooms must be thoroughly washed, since there is usually a lot of sand in them, after which we cut them into large pieces and fill them with water. Soak the lines for 45 minutes, then change the water. Repeat the cycle two more times. After the third soaking, drain the water, and put the mushrooms to boil in slightly salted water.

Cook the lines for half an hour, throw the mushrooms into a colander, let the liquid drain completely. Peel and chop the onion finely, then fry it in butter until it is beautifully golden. Add the prepared lines and cook everything together over medium heat until the moisture evaporates almost completely.

It's time to add sour cream. Stir the contents of the pan and fry the mushrooms with sour cream for 10 minutes. If necessary, we add salt. Sour cream sauce should turn slightly brown.

Sprinkle the finished dish with chopped green onions.
