Satisfying, delicious, without problems - a great replacement for harmful sausage! It turns out a wonderful thing - both for breakfast, and on the road, and for a snack to work - it goes everywhere just for "cheers"! A beautiful golden color gives a special appetitiousness to the dish! Podcherevok (puzanina) is a part of pork brisket, rolls are usually prepared from it, salted, smoked, i.e. they make products that are an excellent alternative to store-bought sausages. They are preferable because of their naturalness - it's not for nothing, as V.V. Pokhlebkin writes, recipes from whole foods were common in Russia (even fillings were made mainly from whole foods: berries, apples, mushrooms, choosing small ones). A thicker podcherevok is cooked in chunks, a thin one can be slightly wrapped like a roll. To do this, take a kilogram of the thin edge of the brisket, cut off the ribs, if there are any. Brisket is usually with frequent layers of meat - the more such layers, the less fatty the final product will turn out.

1. Prepare onion broth: pour 1 liter of water into a saucepan, add salt, onion husks, bay leaf and pepper. Boil it.
2. Rinse the belly, be sure to drain, rub with salt - 1 tbsp.spoon - pepper with ground pepper, stuff with garlic cloves and roll into a roll, pull together with threads or twine.
3. Dip into onion broth, bring to a boil, then reduce the heat and simmer for an hour and a half. Leave to cool in the solution.
4. When the roll becomes warm, take it out and put it under the press until it cools down completely - you can put it in a cool place, on the balcony, for example.
5. After complete cooling, the roll can be rubbed with crushed garlic (optional, if you like fresh garlic and it is appropriate), wrapped in parchment and stored in the refrigerator for as long as possible!
