    We select the most beautiful, ripe and fragrant berries for strawberry compote for the winter. Unripe, spoiled and crumpled berries are not suitable for canning. Strawberries are washed in a basin with water in small portions, gently stirring it with your hands a couple of times. Drain the water and pour clean. After washing it again, we carefully transfer it to a wide container so that the berries that have been saturated with water do not crumple. You can take any berries, but it is better to give preference to small ones.

    Measure out the right amount of sugar and citric acid. Citric acid can be replaced with a tablespoon of lemon juice. Carefully release the strawberries from the stalks. They come off easily with your hands.

    Prepare the cans for preservation. You can take glass jars with screw caps of any size. I usually close compotes in three-liter jars. Be sure to wash cans of baking soda. Then we warm them up either over steam or in the oven – 5-7 minutes is enough, we put the jars with the neck down. The lids also need to boil for 5 minutes and cool.

    Put the prepared strawberries in a sterile jar so that it takes up about 1/4 of the volume of the jar. To get a more saturated compote, you need to fill the jars by a third.

    Pour sugar and citric acid into a jar with berries according to the recipe.

    Boil clean water. Pour boiling water into a jar with strawberries, sugar and lemon. We act carefully so that the glass does not burst from the temperature drop. When the liquid reaches the hangers, we close the jars with lids using a seaming machine. Then carefully turn the jar over several times to dissolve all the sugar. At the same time, we check the tightness of the seaming. You can see how, thanks to citric acid, strawberries begin to color the compote in a bright color.

    Put a jar of strawberry compote on the lid, wrap it with a blanket or blanket. We leave it like this until it cools down completely.

Such a drink made with citric acid turns out to be very refreshing, not cloying with a pleasant sourness.
