    Step 1.

How to make classic okroshka with sausage on kefir? Let's prepare the ingredients according to the list. Okroshka, like olivier salad, has many different recipes, as a rule, each hostess has her own signature recipe, different from others. But let's focus on the classic, the most popular, simple, with boiled sausage in the composition. Cut the sausage into small cubes.

  2. Step 2:

    Step 2.

Pre-cook potatoes in a uniform, let them cool down a little, peel and cut into the same small cubes.

  3. Step 3:

    Step 3.

Hard-boiled chicken eggs in salted water so that they do not burst during cooking. Cook for 10-12 minutes. Fill them with cold water, let them cool, clean and cut with a knife or with an egg cutter into small cubes.

  4. Step 4:

    Step 4.

Fresh cucumbers are washed and cut into small cubes or halves, quarters of circles, as you like.

  5. Step 5:

    Step 5.

Fresh dill greens, green onions are thoroughly washed, dried and finely chopped with a knife.

  6. Step 6:

    Step 6.

Put all the cooked ingredients in a deep bowl. Classic okroshka, the recipe of which has been known since the days of our grandmothers, necessarily includes sauerkraut, now some housewives replace this product with other ingredients similar in taste. But, in my opinion, the most delicious okroshka is obtained with sauerkraut, with a slight sourness. We wash the sauerkraut with cold water, squeeze out the liquid and put it with other ingredients.

  7. Step 7:

    Step 7.

Put salt to taste, chilled sour cream in a salad bowl. Add the greens to the okroshka. Mix the ingredients. Kefir can be used as a liquid dressing, but it is advisable to take this product with a small percentage of fat content, because sour cream has already been added, or replace kefir with whey or kvass. I add kefir. The liquid must be cooled so that the okroshka turns out tasty and not sour.

  8. Step 8:

    Step 8.

Serve the okroshka to the table or pre-let it cool a little in the refrigerator. But you need to be extremely careful with the use of cold dishes in hot weather, so as not to catch a cold. Enjoy your meal!

How to cook hard-boiled eggs? So that the eggs do not crack when cooking, put them in cold water and put them to cook on a small fire. Boil the eggs for 9 minutes after boiling, then pour cold water and cool. From a sharp temperature drop, the shell will be better cleaned.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
