Delicious and hearty dish of Tatar cuisine for hot or tea! Kystybyy is a fresh fried flatbread with potato filling. This is a traditional Tatar and Bashkir dish, which is made with mashed potatoes or millet porridge.

    Drain the water from the pot with potatoes, turn the potatoes into mashed potatoes with a push or blender, add milk, a piece of butter, salt if necessary.

    Peel the onion, finely chop with a knife. Pour vegetable oil into a frying pan, heat it up, fry the onion in oil until transparent.

    Pour sifted wheat flour into a bowl with liquid. Knead elastic smooth dough.

    Cover the bowl with the dough with a towel and put it in a warm place for half an hour.

    Proceed to frying tortillas. Fry the tortillas in a dry frying pan. Divide the dough into 12 parts and roll each of them into a thin layer. To make the cakes blanks smooth and beautiful, they can be cut out of the dough on a plate.

    In a well-warmed frying pan, we spread the blank of the tortilla and fry it until it is browned on both sides, a couple of minutes is enough for each side.

    Remove the tortillas from the pan and immediately lubricate each of them with butter on each side. You need to do this while the tortillas are hot so that they absorb the oil well.

    We put part of the potato filling on half of each tortilla, cover with the other half of the tortilla. The cakes are soft and do not unfold, so you do not need to fasten the edges tightly. Before serving, the kystyby should be smeared with melted butter. We serve the tortillas to the table. Bon appetit!
