Homemade coconut milk ice cream

Please yourself and your loved ones with natural coconut ice cream. The other day I made an unusual ice cream on coconut milk with coconut chips. Cooking such ice cream is very easy. But in the end we get 800 g of delicious dessert.

    Prepare the ingredients. To make homemade ice cream from coconut milk, we will need: coconut milk, heavy cream for whipping (33-35% fat content); sugar, yolks, coconut chips (optional).

    In a saucepan with a thick bottom, combine coconut milk, sugar and yolks. Mix it up. At first, the color of the cream will be gray. Don't be scared. Gradually, the color will even out and become a soft beige.

    Put the saucepan on a slow fire or on a water bath. With constant stirring, cook the cream until thickened for 10-15 minutes.

    Remove the finished custard coconut cream from the heat, cover with cling film "in contact" and cool. To speed up the process, you can put a saucepan in a container with cold water.

    Beat the cooled cream with a mixer into a lush, stable foam.

    Pour the cooled coconut custard into the whipped cream. Mix everything thoroughly until smooth.

    Add coconut chips (optional) and mix again.

    Put the mass in a deep container and put it in the freezer. If possible, mix the ice cream thoroughly 5-6 times every 30 minutes. Thus, ice crystals will not appear in it.

To begin with, let's define the concepts. Coconut milk is not the kind of water that splashes inside a whole tropical nut. That liquid is called coconut water, consists of almost 95% water itself and practically contains neither fat nor other nutrients. Milk is a carefully processed mixture of coconut pulp and water to a homogeneous mass.

The use of coconut milk strengthens the immune system, has a beneficial effect on the skin, slows down the aging process, regulates digestion, helps reduce fever, relieves asthma, osteoporosis and kidney stones.
