Traditional Russian pastries, cooked at home! Previously, I always bought bagels in the store, not suspecting that they can be prepared by the most affordable products. The process is very simple and fun, making steering wheels is a pleasure. And we will definitely boil them before baking!

    We heat the water to a temperature of about 35 degrees, it should feel pleasantly warm, in no case hot! The yeast that we will dissolve in it is a living organism, it can die in hot water. Add yeast and sugar to the water, mix and leave for 15 minutes.

    After 15 minutes, such a "cap" should form on the surface - this means that the yeast is good, working, they woke up and began to act. Add salt and all the flour, having previously sifted it. Start stirring with a spoon.

    When all the flour gets wet, add the butter and mix until the flour lumps disappear. Leave the dough to rest for 20 minutes. I covered it with a lid, you can use a towel.

    Put the dough on the table and start kneading. It is not necessary to add flour, the dough does not stick at all. Knead to a smooth, elastic state.

    Put the dough back in the basin, cover, and leave for 40 minutes for the approach.

    The dough should grow twice. That's it, you can start making steering wheels, but first of all, turn on the oven to warm up to 220 degrees.

    Put it on the table again and divide it into equal parts. I made half a portion, I got 6 pieces. From each we make a bun.

    Before you start forming the bagels, you need to put a pot of water on the fire and boil it. The steering wheels should not stand on proofing, this will worsen them, everything must be done quickly. We form a steering wheel: we take a bun, make a hole in it with our thumbs.

    We begin to stretch the dough, kneading along the entire circumference, to a thickness of about 1-1.5 cm. We put the resulting bagel on the table.

    I advise you to make all the steering wheels right away.

    Now we need to boil them. We lower the steering wheel into boiling water and count to 10.

    We take out the steering wheel with a slotted spoon, shake off a little drops of water and put it on a saucer with sesame seeds. Then we transfer the steering wheel to a baking sheet lined with parchment, turning sesame upside down.

    We do this with all the steering wheels. Put the baking sheet in the oven. If you make a whole portion, then start forming the next ones only after the first baking sheet is baked.

    Bake the bagels at a temperature of 220 degrees for about 20 minutes, they will turn brown and grow. Bon appetit!

Fresh bagels are very tasty! The crust crunches slightly, the crumb is airy and porous. A day later, the steering wheels dried up and began to look like purchased ones.
You can dip the steering wheels not only in sesame seeds, but also in poppy seeds, or you can do it without sprinkling at all.
I would add vanilla to the dough, for a brighter taste.

Dry yeast can be replaced with fresh pressed yeast, based on the proportion of 1:3. That is, for 1 gram of dry yeast required by the recipe, you need to take 3 grams of fresh.

Keep in mind that everyone's ovens are different. The temperature and cooking time may differ from those specified in the recipe. To make any baked dish successful, use useful information about the features of ovens !
